Supper at home

I try to prepare healthy meals for us so that we can get enough greens and protein and with nothing too fattening.  It's difficult since we both like food a lot, especially stuff like mashed potatoes and biscuits and fried chicken.  But we have decided to cut down on those types of food and eat healthily for most of the week.

Typically, we'll have green salad that would fill half of our plate.  Then, we'll have a protein like chicken breast and some carbs like potato or pasta.


This was what we had yesterday.  Grilled drumsticks with a salad of two different types of lettuces, carrots, cucumber, tomatoes and grapefruit segments.  I also made a creamy potato salad.  We have some wild onions growing near our potato patch so I took a small bunch when we passed by our garden while on our walk.  The leaves were so fresh and crunchy and smells so good.  I chopped them and threw them into the potato salad.  Yummy!

The Swedes eat a lot of potato salad.  The supermarkets are well stocked with many brands of ready made potato salads.  I love them but they are too creamy for me and I could picture my thighs getting bigger with every spoonful of this sinful dish.  I decided to make my own potato salad with less mayonnaise.  I added mustard and lemon juice to make it more flavourful.  Here is the recipe if you would like to try it.

Potato Salad
2 large potatoes (the yellow, waxy ones are better for this, not the Russet potatoes)
2-3 tbsp mayonnaise
1-2 tbsp mustard
1- 2 tbsp lemon juice
1 small pickle, diced
a sprig of spring onions, chopped
salt and pepper to taste

Peel and dice the potatoes.  Boil them in lightly salted water until tender.  Cool the potatoes then add the rest of the ingredients.  You can increase or decrease the amount of the mayonnaise or mustard to suit your taste.  Chill the salad before serving.
